Being as I can have any amount of rhubarb I need from our neighbour, I'm going to have a go at Orange and Rhubarb Jam today. It seems a really easy recipe. If anyone is interested I'll post it on here when I've made it and tasted.

Ok, fancy-smancy jams, huh? I like apple butter. Does that make me a bad person?

2.1/2bs of Rhubarb cut into small pieces
2 Oranges
6 tablespoons of powdered pectin
6 cups of sugar
Carefully remove skin from oranges with a potato peeler and cut into small slivers. Juice oranges and save pulp from one orange
Put rhubarb,orange pulp orange juice orange slivers into a large pan, bring to boil then cover and simmer for about 5 minutes. Add pectin stirring in well. Bring back to a rolling boil for 1 minute contantly stirring. Add sugar mix in well, bring back to a rolling boil and boil for about 5 minutes until mixture thickens. Ladle into warm jars seal and process in a water canner for 10 minutes

that looks easy to make Linda i shall give it a try, and thank you so much for the conversion link i have added it to my bookmarks :)
